Healthy Chicken Nachos

I've received a lot of questions and emails in regards to the healthy nachos that I cooked for the Superbowl, so i figured that i'd do a posting about them and show you how you can make them for yourself.

What you'll need:
 Whole Wheat Pita's, Ground Chicken, Olive Oil, Light Cheese, Veggies of choice

Instructions:
1) Cut Whole Wheat Pita's into triangles to replicate a nacho chip, place in a bowl and sprinkle lightly olive oil over them so they are lightly coated.

2) Place the triangle chips on a baking sheet and cook for 8-10 minutes on 400. (Or until crispy)

3)Brown the ground chicken in a frying pan, Add spices such as Ms. Dash, Paprika, Chilis, Black Pepper

4) Place fully cooked chicken on top of the triangle pita chips, add whatever veggies you'd like. I used mushrooms, tomatoes, green peppers, green onions, and corn. Sprinkle light cheese on top.

5) Place back in the oven on 400 and cook until the veggie are tender and the cheese is melted. Constantly check to make sure the chips aren't burning.
